                                                HERRING  IN SOUR  CREAM

                     6 herring fillets                                              1 apple, peeled cored
                     1 cup sour cream                                          cut into this slices
                                                                                         or coarsely grated
                     3 Tbsp. lemon juice                                       1 onion /  thin slices
                        or white wind vinegar                                  1 tsp. dill weed
                     2 tsp. sugar                                                    Lemon slices garnish
                      Freshly ground black pepper    

     Cut the herring fillets into 1" pieces.
     Mix sour cream, lemon juice, sugar and pepper
     Add herring, apples, onions
     Mix lightly and marinade for several hours
     Sprinkle with dill weed and garnish mit lemon slices

     ***Note:
     This is a very popular first course in Northern Germany.

                                              PICKLED  MUSHROOMS

1 lb. small mushrooms                                              coarsely ground pepper
1 tbsp. salt                                                               1/2 tsp. dried thyme
1/1/2 cup onion/chopped fine                                    2 cups dry white wine
1/2 tsp. garlic juice                                                    1 1/2 cups cider vinegar
1/4 cup parsley/chopped/fresh                                   1 bay leaf
1/2 cup olive oil                                                         half lemon juice

     Wash mushrooms thoroughly in cold water
     Drain.
     Blend all other ingredients
     Pour over mushrooms in enameled /stainless steel saucepan
     Bring to boil and simmer 8 - 10 min  (or tender)
     Let cool.
     Keep covered in fridge
     ( makes 6 large servings / 12 appetizer servings)

                         GERMAN  CHAMPAGNE  PUNCH

1 -  10 oz pkg frozen peaches                             2 quarts ginger ale
2 qts, white Rine wine                                        1 bottle (1/5) champagne
1 pt. strawberries fresh / frozen

     Combine peaches et wine
     Chill  (2 - 3 hrs)
     Pour peaches/wine in punch bowl
     Add champagne et ginger ale
     Do not add ice
     Garnish mit strawwberries
     24 servings

                              GLOGG    (Hot Cordial)


      In Saucepan:

     1 bottle ordinary red wine
     3 Tbs. schnapps, vodka et others
     Add:
     1 ginger root (whole)
     2 stick cinnamon
     6 - 8  cloves
     Let stand to draw
     Mix: all together et bring to boiling point
     Pour over 1/3 cup raisins et 3 Tbs. blanched almonds in small heatproof glasses or mugs.

                                 OLDE  TIME  STOLLEN


     3 1/2 cups milk                               5 egg yolks                            
     2 pkgs dry yeast                              3 - 4 oz. brandy  
     1/2 cup warm water                        1 lb. raisins (chopped)
     10 cups sifted flour                         1 lb. citron  (chopped)
     2 tsp. salt                                         1 lb. nuts    (chopped)
     1 tsp. cardamon                               1/2 lb. dates - cut
     2 1/2 cups butter (or sub)                 1/2 lb. glazed cherries (chopped)
              melted et cooled                      1/2 cup powdered sugar
     1 l/2 cups sugar                                currants
     1 tsp. grated lemon rind

     Sift flour mit 1 tsp. salt et 1 tsp. cardamon
     Scald milk...cool to lukewarm
     Dissolve yeast in water - add to milk
     Add 6 cups flour (already sifted mit salt et cardamon) to make soft batter
     Let rise until doubled
     Add 1 1/2 cups butter - sugar - lemon rind - egg yolks et brandy
     Mix thoroughly
     Add rest of flour (4 cups) slowly
          until mixture loosens from bowl
     Knead in fruits et nuts
     Divide mixture - 5 parts - shape into long ovals
     Place in greased loaf pans
     Slash tops
          (2 rows slanted to end loaf)
     Let rise til doubled
     Bake 350 degrees for 1 hour
     Partially cool (but while warm) spoon 1 cup butter - letting it soak into loaves
     Sprinkle with confectioner's sugar

     Stollen needs 2 - 3 days to mellow

                        GRANDMA'S  EGGNOG


     4 eggs, separated                         4 Tbs. powdered sugar
     4 - 6 Tbsp. rum or brandy           3 cups milk
     Nutmeg

     Beat egg whites to froth / add sugar and beat
     mix egg yolks rum/brandy  (or both)
     beat well.....add to egg whites
     Blend et add milk.
     Serve at once!
     Variation:  2 1/2 cups milk...1/2 whipping cream for richer brew

                      FOUR  CHEESE  BALL


     3 oz pkg. cream cheese, softened
     1 cup or 4 oz shredded Swiss
     1 cup or 4 oz shredded American cheese
     1/4 tsp. hot peppersauce
     1/4 cup mayo or salad dressing
     1/2 tsp onion powder
     1/2 tsp Worchestershire sauce
     2 Tbsp. chopped pimientos
     1 cup crushed potato chips
     1 1/2 tsp.  Parmesan cheese

     Crush potato chips et mix mit Parmesan cheese
     Mix all other ingredients
     Make 1 large or 2 smaller balls
     Roll in chips/cheese mix til covered
     Chill

             SOUR  CHICKEN


     1 chicken                                     1 whold chili piquin
     Seasoned flour                             1 bay leaf
     1/4 cup butter (or sub)                 1/4 cup vinegar
     3 crushed chili piquin

     Cut chicken into serving sizes
     Coat chicken mit seaned flour
     Braise in butter til golden brown both sides
     Put in large kettle
     Add dripping et enough water to cover
     Add chili piquins et bay leaf
     Simmer until tender
     1/2 hr. before serving....add vinegar

         *************************************************************

   1 Tbsp. salt                                                            1/2.dried thyme
   1 1/2 cups chopped onions, fine                              2 cups dry white wine
   1/4 tsp. garlic juice                                                  1 1/2 cider vinegar
   1/4 cup chopped parsley                                         1 bay leaf
   1/2 cup olive oil                                                       1/2 of lemon juice

   Blend all incredients...(except mushrooms)
   Wash mushrooms thoroughly in cold water...drain
   Pour ingredients over mushrooms...in enameled or stainless steel pan
   Bring to boil et simmer 8 - 10 min.  (or til tender)
   Let cool
   Keep covered in fridge
   6 servings or 12 appetizers

                             APPLE  MALLOW  YAM  YUMS

   2 Cooking apples (cored/sliced)                    2 (17 oz.) can yams, sliced
   1/3 cup chopped pecans                                into 1" pieces, or 3 lbs. fresh
   1/2 cup brown sugar, packed                         yams, cooked
   2 cups miniature marshmallows                      1/2 tsp. cinnamon
   1/4 cup butter  (or sub)

   Peel, cut into large pieces...cook til tender (if fresh are used)
   cool...cut into 1" slices
   Toss appe slices and nuts with brown sugar et cinnamon
   Alternate layers (standing on edge) of apples et yams in a
   7 1/2 x12"x12" casserole
   Distrubte brown sugar mixture evenly
   Dot with butter
   Cover with foil and bake 350'  (30-40 min.)
   Sprinkle mit marshmallows and  broil lightly
   6 - 8 servings

                                                 NOODLES

   4 eggs                                 Flour
   2 Tbsp. milk

   Beat eggs, add milk et flour
   Use enough flour to make dough easy/not sticky
   Roll dough thin on floured board
   Put clean towel over chair back
   Lay dough on towl to dry to slightly hard
   Roll it up in jellyroll
   Cut thin/wide as desired
   Separate strips et place on cookie sheet to dry some more
   Cook in boiling salted water just until tender
   Serve mit gravy, butter, bread crumbs...etc.

                      ***************************************************

                                                        SAUERKRAUT

    1 qt. bulk or canned sauerkraut            1 apple, pared, cored, grated
    undrained                                             1 Tbsp. butter
    1 potato, pared et grated                       1 tsp. caraway seed
    1 Tbsp. brown sugar (to taste)

    Combine all ingredients except butter et caraway seed in 3 qt. stainless pan
    Bring to simmer
    Cover simmer 20  - 25 min.
    Stir in butter et caraway
    5 + servings

          *******************************************************

                              HERRING  SALAD

   3 med red potatoes                        1 large tart red apple, chopped
   1 (16 oz.) can beets                        1 large onion, chopped
   1 (18 oz. ) jar spiced herring/cut      black pepper to taste
   3 med. sour pickles                         3 lemons - juiced

   Boil potatoes
   Cool et peel
   Dice et put in large mixing bowl
   Dice beets
   Clean et cut herring into small pieces
   Add pickles, apples et onion
   Add black pepper to taste
   Pour lemon juice over all
   Stir well
   Cover with slices of lemon et onion
   Cover...put in fridge
   Can be made a week ahead - will keep for weeks

                             GERMAN  POTATO  SALAD

   Potatoes cooked/peeled/cubed               Onion grated
   Fresh parsley                                          Hard boiled eggs/ grated
   Fried bacon / crumbled                           Salt et Pepper

   Put all together
   DRESSING: 1/4 cup beer, 1/4 cup oil, 1/4 cup vinegar
                        Shake hard et pour over potatoes salad

                              ANISE  COOKIES  (BISCOCHITOS)

   1 cup Shortening                             3 cups flour
   1/2 cup sugar                                  1 1/2 tsp. baking powder
   1 egg                                              2 tsp. vanilla
   1 tsp. anise seed

   Cream shortening, sugar, egg et ainse
   Blend well
   Add dry ingredients et vanilla et mix well
   Roll out 1/4" thick et cut out mit cookie cutter
   Sprinkle mit cinnamon sugar
   Bake at 375' for 15 min or until golden brown

                                                      GOLD COOKIES


   1/2 Cup shortening                        1/2 tsp. baking powder
   1 1/2 cup sugar                               1/4 tsp. salt
   4 egg yolks                                    Nuts et Cinnamon Mix
   2 Tbsp. milk                                    3/4 cup pecans
   1 tsp. vanilla                                    2 tsp. cinnamon
   1 1/2 cup sifted flour

   Mix all
   From dough into 1" balls
   Place 3" apart on ungreased baking tins
   Bake 12 - 15 Min. at 400'
   Yield:  5 doz.

           ***********************************************************

                                          PFAFFENBRODT           (Priest's Bread)

   2 cups flour                                              1 cup +  2 Tbsp. sugar
   4 egg yolks + 1 whole egg                       2 cups pecans, chopped
   1 tsp. baking powder                                 lemon juice

   Beat eggs - add sugar slowly til lemon colored       (today can use electric mix)
   Add nuts, baking powder et flour, lemon juice        (by hand)
   Roll 1/4" thick
   Cut into diamond shapes   (or not)
   Bake at 325' until color begins to change.

                                 GINGERBREAD BOYS

   2 Cups sifted flour                             1/2 tsp.nutmeg
   1/2 tsp. salt                                         1/2 vegetable shortening
   1/2 tsp. baking soda                           1/2 cup sugar
   1 tsp. baking powder                          1/2 cup molasses
   1 tsp. ginger                                        1 egg - separated
   1 tsp. cloves                                        Ornamental icing
   1 1/2 tsp. cinnamon
   Red cinnamon candies

   Onto wax Paper...sift together:
   flour, salt, baking soda et powder, ginger, cloves, cinnamon et nutmeg
   Cream:   (in bowl)
   shortening, sugar et molasses until light/fluffy
   beat in egg yolk (reserve white) then...flour mixture
   On lightly floured board  - roll out dough 1/4" thick
   Cut out cookies mit floured gingerbread-boy cutter
   Bake 350' for 8 - 10 min.
   Cool on wire racks
   Decorate mit buttons, eyes, etc.
   Makes 24 five-inch boys


            *************************************************************

                                             PFEFFERNUSSE     

   2 1/4 sifted flour                            2 eggs
   2 tsp. cinnamon                             1 cup brown sugar
   2 tsp. cloves                                   1 cup finely chopped pecans
   1/2 tsp. mace                                  1 tsp. grated lemon rind
   1/4 - 1/2 tsp. black pepper              1/2 cup slivered citron

   Sift together all dry ingredients
   Beat eggs til fluffy - add sugar
   Add dry ingredients, pecans, lemon rind et citron
   Combine et chill several hours
   Cut with floured whisky jigger (or other cutter) at least 1" thick
   Place on foil covered cookie sheets 2" apart
   Let stand 24 hours
   Turn cookies over  - dip top in brandy or bourbon   (or both)
   Bake 350' for 20 min. or so
   Remove from pans et store tightly covered.
   Mellow several days     (may be frozen)

                                                  A Traditional Recipe

           *****************************************************************

                                   LEBKUCHEN

   1 cup honey                             1 tsp. baking powder
   3/4 cup brown sugar                1 tsp. cinnamon
   1 egg                                        1 tsp. nutmeg
   1 Tbsp. lemon juice                 1 tsp. cloves
   1 tsp. grated lemon rind           1 tsp. allspice
   2  3/4 cups flour                        1/3 cup citron - finely chopped
   1/2 tsp. soda                             1/3 cup chopped pecans
   1/2 tsp. salt

   Place honey in saucepan - bring to boil
   Cool thoroughly
   Stir in brown sugar
   Add egg et lemon
   Mix and add all dry ingredients
   Mix in citron et nuts
  Chill overnight
   Roll out a small amount at a time...keep rest chilled
   Roll 1 1/4" thick
  Cut in squares of fancy shapes
  Place on greased aluminum foil 1" apart
  Bake 350' for 10 - 12 min.
  Decorate candied fruit or powdered sugar frosting

             ***************************************************************

                                           MOLASSES COOKIES

   2 cups sugar                                             1/2 tsp. cloves
   1 cup molasses                                          a little nutmeg
   1 cup shortening                                       pinch salt
   1/2 cup warm water                                  1 cup (or  more)  pecans (chopped)
   1 Tbsp. baking soda -let soak                    3 - 5 cups flour

   Mix sugar et shortening
   Add molasses then water et soda
   Mix well
   Flour enough to make dough stiff enough to roll out
   Cut mit cookie cutter
   Placed on greased cookie sheet
   Bake at 350'
   Be watchful...they burn easily...but Yumm

             **********************************************************

                                             PFLAUMEN SUPPE

                                                 (Plum Soup)

    1-1/2 lbs. fresh plums or (canned)            1 Tbsp. lemon juice
    4 1/2 cups water                                         1/2 cup white wine or apple cider
    rind or slices from 1 lemon                          3 Tbsp. melted butter
   1 1/2 cornstarch                                           1/4 cup sugar / not if using canned
   1/4 tsp.  cinnamon                                        buttered toasted small bread
   1/4 -1/2 ground cloves                                  cubes

   Slice fruit - place in 3 qt pan
  Add water et lemon rind
   Simmer til tender
   Sieve
   Return to saucepan - bring to boil
   Remove and add cornstarch (mixed mit 3 Tbsp. water)
   Continue stirring et bring to boil then simmer
   Stir frequently 5 - 10 min. til done
   Season with:  cinnamon, sugar, cloves, lemon juice and wine

   Note*
   Other fruits, such as apples, pears or cherries may be substituted for plums
   May combine fruits

                   **********************************************

                                         SUSSER  DICKER  REISBREI
                                                 (Sweet Thick Rice)

   1 cup raw plain rice                                    1/4 cup honey (or sugar)
   2 cups boiling water                                   2 - 3 tsp. cinnamon
   1 tsp. salt                                                     1/4 cup butter (melted)
   3 - 4 cups milk                                             1 Tbsp. butter (unmelted)
   1/2 lemon rind                                          


   In saucepan:  add rice, salt and 1 Tbsp. butter to boiling water
   Reduce heat - simmer covered 20 min.  (or til most water is absorbed)
   Add milk et simmer uncovered til tender et creamy (not soupy)
   Stir frequently
   Add more milk if needed.
  When done, put in oven proof dish.
   Pour melted butter over rice along mit honey et cinnamon
   Keep warm til serving
   May be served cold

                                         CHOCOLATE  CHIP  CRUNCH  COOKIES

                 Preheat oven to 375 ' F
    
                 1 cup butter  (2 sticks, melted)         Form dough into walnut balls                                                                            
                 1 cup white sugar                             Place on greased cookie sheet                                                                                           
                 1 cup brown sugar                            Press down  mit  floured fork                      
                 2 teas baking soda                             Bake  at 375' for  10 min.
                 1 teas salt                                           Cool  2 min.
                 2 teas vanilla                                      Remove to wire rack
                 2 beaten eggs
                 2 1/2 cups flour  (not sifted)                    SO  GOOD!!!
                 2 cups crushed corn flakes
                 1 - 2 cups chocolate chips
